Greek Yogurt Sauces

The following are wonderful with fish (such as Oven Roasted Salmon) and raw vegetables. Simply mix the ingredients and serve. If you prepare these ahead of time, taste them before serving, as they may need a bit more lemon or salt.

Horseradish Sauce

1 cup plain Greek yogurt (I like full fat, but use any kind you prefer)
3 tablespoons prepared horseradish (Gold’s white is really good)
1–2 tablespoons fresh lemon juice (to taste)
1 garlic clove, minced
1 tablespoons minced fresh parsley
Salt and freshly ground black pepper

Dill Sauce

1 cup plain Greek yogurt (I like full fat, but use any kind you prefer)
1–2 tablespoons fresh lemon juice (to taste)
1 garlic clove, minced (or minced shallot)
2 tablespoons minced fresh dill
2 tablespoons chopped scallion (or red onion)
Salt and freshly ground black pepper
